Shrimp scampi is an Italian-American classic that starts with a simple base of shrimp sautéed in butter, garlic, and white wine, according to The New York Times, and one which features many variations, such as breading the shrimp or adding tomatoes to the dish. In this easy version from recipe developer Michelle McGlinn, the seafood ante is upped by including not only shrimp but scallops, too. In the dish, a quick, flavorful reduction is made using white wine, pasta cooking water, and shrimp shells, creating the sauce for the angel hair, which is then tossed with garlic-seared scallops, shrimp, and plenty of lemon juice and parsley for freshness.
