Slurp this delish bowl of Malaika Arora’s chicken ‘soup for the soul’ (recipe inside) - The Indian Express

On days when we feel under the weather or just crave a light, wholesome meal, soups come to the rescue; especially during seasons when our body is either exposed to viruses or just craves that sense of warmth while enjoying the showers with a hot, healthy meal.

Fitness enthusiast Malaika Arora expressed the same view as she took to Instagram to share her bowl of delish chicken soup, calling it “soup for the soul”.

As such, certified health coach Maha Corbett shares her recipe for chicken soup brimming with all things nourishing. Take a look!

Ingredients:

2 tablespoons olive oil
1 large diced brown onion
1 leek, finely sliced (white part only)
2 cups chopped celery
4 cloves of crushed garlic
3 tablespoons grated fresh ginger
3 cups diced carrots
600g skinless chicken thighs, cut each one into three pieces
2 liters of chicken stock
1/2 teaspoon crushed red chilis or any kind of red chili paste
1/4 teaspoon ground turmeric
1 tablespoon apple cider vinegar
3 cups broccoli florets
1 cup frozen peas
1/2 cup chopped parsley

Preparation:

1. Heat the olive oil in a large saucepan over medium heat. Add the onion, leek, garlic, ginger, and celery. Sauté until softened (around 5-8 mins). You may also add some ramen noodles at this point, as spotted in Malaika’s bowl.

2. Add the carrots, chicken thighs, chicken stock, apple cider vinegar, turmeric, and crushed chilis into the pan. Bring to a boil and then lower the heat. Leave to simmer for about 15 mins and then check on the chicken thighs to see if they have been cooked. You may need to pop back in after another five mins.

3. Once the chicken thighs have been cooked, remove them and set aside to cool.

4. Add the peas, parsley, and broccoli to the saucepan. Keep cooking until the broccoli is tender.

5. In the meantime, shred the chicken thighs and once the broccoli has softened, add the chicken back into the pot.

And voila! Your own version of Malaika Arora’s yummy bowl of chicken soup is all ready to be relished. Dive in!
