I won’t lie: When it comes to making dinner, I have been quite lazy. My meals typically fall into three camps — leftovers, delivery, or instant foods. Of course, it’s not every day that I have leftovers, and it’s not every day that I can order delivery (what am I, made of money?). So more often than not, I end up eating instant ramen, or something of the sort.
While there are plenty of great options on the market, I recently found a delicious alternative. Not only is it something that I never thought would be instant-ified, but it’s also amazingly delicious, comforting, and ready in under 30 minutes.
Masoor Dal
Paro is a recently launched company, which as of right now, sells three things — boxed masoor dal, boxed kitchari, and tarka, a unique spin on a chili crisp. But let’s start with the masoor dal, which I’ve been making almost every day for a week straight.
The box is filled with one bag of dried red lentils with all of the spices you need to make the dish flavorful, so no digging around in the spice cabinet is required. There’s curry leaf for a nutty aroma, turmeric for a yellow tint and a hit of pepper, and coriander seed for a flavor of, for lack of a better word, a curry. All you have to do to make this dish is dump the bag into a pot of boiling water and let it simmer for about 18 minutes.
Kitchari
The end result is a comforting bowl of lentils that requires no additional seasoning and makes for a light lunch that won’t weigh you down for the rest of the day. The dish is so flavorful that I’ve made it every single day this week. It’s seriously that good.
Paro also has a kitchari, which is basmati rice with mung beans plus a blend of seven different spices. The process to make the dish is exactly the same, and the end result is equally (if not more) flavorful. With a little bit of the brand’s tarka, or chili crisp with ghee, it’s another great lunch I can’t stop eating.
This is all to say, I love it when a brand makes it simple to make delicious foods I might not eat otherwise, and thanks to Paro, I’m taking full advantage of this. If you want to mix up your routine, I recommend you grab a box (or two) and try it out. You can thank me later.
